The olive oil has a white plastic cap that is non-removable per Italian law and is designed to maintain the quality and integrity of the oil! It acts as a dispenser to allow only the amount necessary to dress and season a dish. The screw cap is then reattached to the bottle helping reduce the amount of oxygen, which is the enemy of oil.
